Fresh Ginger and Apple cake. yum.
- 110g butter
- 225g dark brown sugar
- 2 eggs
- 30g grated fresh ginger
- 225g self raising flour
- 280g grated cooking apple (recipe says diced but i prefer grated)
topping:
- 2 tbsp runny honey
- 2 tbsp Demerara sugar
- heat oven to 170c/325f/GM 3
- cream butter & dark brown sugar, mix in eggs then ginger
- sift flour and fold in, then mix in apple.
- pour into greased 20ch/8in cake tin, bake for an hour until risen and brown
- topping: mix honey & demerara and spread over cake.
to be honest i usually just sprinkle the sugar on, the cake is sweet and moist anyway!
