Fresh Ginger and Apple cake

Fresh Ginger and Apple cake. yum.

  • 110g butter
  • 225g dark brown sugar
  • 2 eggs
  • 30g grated fresh ginger
  • 225g self raising flour
  • 280g grated cooking apple (recipe says diced but i prefer grated)

topping:

  • 2 tbsp runny honey
  • 2 tbsp Demerara sugar
  1. heat oven to 170c/325f/GM 3
  2. cream butter & dark brown sugar, mix in eggs then ginger
  3. sift flour and fold in, then mix in apple.
  4. pour into greased 20ch/8in cake tin, bake for an hour until risen and brown
  • topping: mix honey & demerara and spread over cake.

to be honest i usually just sprinkle the sugar on, the cake is sweet and moist anyway!
