RECIPE (1 serving, 15min prep time):
Broth:
-a bunch of cilantro
-1 clove garlic
-a thumbsize piece of ginger
-1/2 cup (120ml) coconut milk
Blend.
Heat it up in a saucepan for 3-4mins.
-1/2 cup (120ml) water
-salt and sugar to taste
-juice of 1/2 lime
Keep it warm on medium heat.
Toppings:
-75g tofu
Fried in oil and tossed in sweet soy sauce
-zucchini and sugar snap peas
Sautéed and seasoned with salt and pepper
-1 serving of your favorite noodles
Cook according to the package instructions.
Assemble everything in a bowl.
