- STORAGE INSTRUCTIONS:
- 🫙 Allow leftovers to cool completely & store in an airtight container in the fridge – keep the mango chutney & yoghurt separately and add once thoroughly reheated.
- 🧊 If freezing, keep the rice separately & only freeze the butterbean & paneer mix. Allow it to cool completely before freezing.
- To reheat, either defrost in the fridge overnight & then reheat in the microwave / on the hob or microwave directly from frozen in short burst.
- Add a splash of coconut milk or water if needed to loosen it up a little!
good to add
- Spinach or Kale: Stir these leafy greens in at the very end. They wilt into the curry quickly and add lots of iron.
- Cauliflower: Chop into small florets. Cauliflower absorbs the Madras curry flavor perfectly and keeps the texture chunky.
- Aubergine (Eggplant): Dice and sauté this with the red onion first. It becomes incredibly tender and creamy in a coconut base.
- Courgette (Zucchini): Slice into thick half-moons. They cook quickly and add a nice freshness to a heavy paneer dish.
- Okra (Bhindi): Slice into rounds and cook with the onions. This is a very traditional pairing for Indian curries and is excellent for lowering blood sugar.
- Green Beans: Chop into bite-sized pieces. They provide a satisfying, crispy crunch similar to the tenderstem broccoli.
